    From Uji, near Kyoto, Uji Karigane Gyokuro "Asagiri" is a high quality blend of first harvest gyokuro leaf and gyokuro stems. Gyokuro is shade grown before harvesting, giving it a greener color and sweeter taste. While this is a very delicious green tea in it's own right, since brewing gyokuro takes practice to perfect we feel this green tea also makes a very good introduction to gyokuro brewing at an economical price point. The added stems add a tartness to this green tea and the combination of the two make this one very tasty Japanese green tea.

    It is prepared in exactly the same way as regular gyokuro, meaning more leaf brewed at a lower temperature for a longer period of time. Use 10 grams per 300ml or less of water.     Grown in Miyazaki Prefecture. Light steamed (asamushi). We knew we had to aquire this when we tasted it as it has a quite strong aroma and very pleasant umami taste.   • Cooking Grade Uji Matcha

    After much consideration, O-Cha.com now offers a higher quality of cooking grade matcha than what is usually encountered on the market. Because we are based in Japan, we are also able to do so at a very reasonable price.  As will all of our products, it is freshly packaged and does not spend weeks in ocean transit or sit for months on a shelf in a warehouse. Unlike many of the cooking grade matcha you may see offered online which are actually grown in China and not Japan, our matcha originates from Uji Japan near Kyoto. Further, we offer this in a 300 gram package.

    Here’s a sad fact - Just because your matcha was produced by a Japanese company does not automatically mean it was actually grown in Japan. There are some Japanese companies who grow some of their matcha in China, import it into Japan, and then re-export it again.  This is particularly the case when it comes to cooking grades of matcha.

    Matcha comes in many quality levels but is basically separated into ceremonial grade and cooking grade matcha. While it’s true one could use any of our ceremonial grade matcha for cooking and as a food ingredient (and would in turn be especially magical), authentic, Japan-grown, ceremonial grade matcha is expensive and can make the price of a matcha based product prohibitively expensive. There is a reason why truly ceremonial grades of matcha are usually sold in 20 - 30 gram cans and not by the kilo.

    We realize there is a real need for a matcha that while may not be suitable for the tea ceremony, is still needed to be of a sufficiently high enough quality to be used in lattes, smoothies, ice cream, baked goods, etc. Know that careful consideration went into our choice of cooking grade matcha because until we offered this product, we refused to sell anything less than ceremonial grade. We wanted real, authentic Japanese matcha.  Not powdered sencha, but matcha. Not grown in China, but grown in Japan. We wanted as high of quality as possible while still making the price reasoable. While this cooking grade matcha will not compete with the quality of our ceremonial grades of matcha, it's actually better than what many are offering online as supposed "ceremonial" matcha!

    As with all of our products, this product You cannot get this kind of fresh product from outside of Japan.

    While this green tea would be a very good tea for beginners, even seasoned green tea fans appreciate this sencha. One of the few second harvest green teas we sell, we carry Daily Sencha because it is an above average quality sencha and offers a very good quality-to-price ratio. This green tea is far and away better than what you will find at most grocery or health food stores and is freshly packaged in Japan within a very short time of when you purchase it.   • Deep Steamed Sōfū Sencha

    Sōfū sencha is an unusual variety of green tea, a cross between Yabukita and another cultivar known as "Inzatsu" 131.  This deep steamed version (do also check out our light steamed Sōfū sencha) is grown in Kakegawa Shizuoka and is yellow-green in color.  It has quite a bit different profile and it is more robust than our our light steamed product.

    Sofu has become popular in recent years due to the purported wide range of potential health benefits. Research has shown that this is due to its anthranilic acid content, which is also found as an aroma component in jasmine tea. It is also being looking at as possibly being beneficial for dementia and Alzheimer's diseases. Sofu also contains a high amount of the component  quercetin (high in many fruits and vegetables such as onions), which is thought to improve brain of cognitive function.

    If deep steamed (fukamushi-cha) green tea is your thing, then this handcrafted Banko-yaki teapot should fit your needs nicely. It has been designed specifically for brewing deep steamed green tea, although it is suitable for all green teas including gyokuro. Unique features of this teapot include:

    • Backward sloping bottom. This effectively separates water from the wet leaves between infusions!
    • Large, round, extra-fine stainless steel infuser removeable infuser screen. Does an especially good job of filtering the characteristically fine leaf particles of deep steamed green tea.
    • Inner rim lip extrudes into the teapot, preventing dripping from the rim when teapot is tipped to an extreme angle.

Unlike the vast majority of green tea tea bags you run across, each of our Gyokuro Green Tea Bags consists of 5 grams of high quality gyokuro leaf (not tea dust).  There are a few gyokuro stems in this tea bag which give the tea a slight astringency but the main flavor is gyokuro all the way. This tea bag comes in a triangular, nylon mesh infusion bag, and will not affect the taste as traditional paper teabags are known to do.

    Notes on Brewing this gyokuro tea bag

    To brew this successfully, you do need to take temperature into consideration. A good proceedure is to use TWO cups to brew this tea.

    1) In your first cup, add hot water (90 ℃ / 194 ℉) and allow it to sit for about a minute. The temperature will drop (see detailed product  images).

    2) Next, pour the water from the first cup into a second cup. The temperature will drop further (see detailed product  images).

    3) Lastly, put the teabag into the first cup (which is now pre-warmed) and pour the water from the second cup back into the first cup with the tea bag. 55℃ / 131℉ is the perfect temperature, brew this for 2.5 to 3 minutes (this is longer than for sencha). Place your used tea bag into the second cup for subsequent infusions.

    From the first harvest in Uji. Kabusecha is grown in the shade for 14~20 days before harvest under 45% shade, giving it characteristics of both sencha and gyokuro. A sweeter, less grassy and more vegetal, less astringent taste than regular sencha, you can definitely taste vegetive hints of gyokuro.  It is easy to brew, not overly astringent, medium steamed, has a lovely green color, and is reasonably priced making it an all around versatile winner of a green tea. Although it has hints of gyokuro, be sure to brew it as you would for sencha, not gyokuro.

    This organic kabusecha green tea comes from Kirishima City, Kagoshima and is of course harvested from the first round of young leaves. Organic Kabusecha is grown for 14 to 20 days under 45% shade before harvest giving it taste characteristics of both sencha and gyokuro. This version comes from the Yabukita clone and is lightly steamed.  The aroma is unusually strong, it has a lovely green color and is quite flavorful.  Brew as you would for sencha. Grown in Takachio, Miyazaki Prefecture Japan.  Organic Kamairi Tamaryokucha is not steamed, but pan fried, the pan firing gives this tea a sweeter, less astringent taste with a touch of roast flavor. The curled, comma leaf shape is also somewhat uniquie and when brewed it has a beautiful clear yellow-green color to it. Harvested from the first round of young spring leaves, this 100% Yabukita green tea comes from the famous Makinohara tea growing district in Shizuoka Prefecture. Very green and very thick. Fukamushi Sencha "Kaoru" has a somewhat more pronounced grassy aroma and taste compared with the average deep steamed green tea and the taste remains on the palate for an extended time.

    Kawane Wa-Kōcha is Japanese Black Tea grown in Kawane town (川根町), located in the Haibara District of Shizuoka Prefecture, Japan. While this area is notable for its production of mainly green teas, it may be surprising to know there are numerous growers who specialize in producing black teas as well. This particular version is produced by a rather old and famous company founded in the 8th year of the Meiji period (ca 1875). The tea blender is a 73 year old tea master and uses high quality techniques in the orthodox manner similar to the way traditional Darjeeling is made, but with a Japanese touch. This tea has characteristics similar to both Darjeeling and Ceylon tea, has a strong aroma, a smooth flavor, and has hints of Japanese sweetness. Kawane Wa-Kōcha can be served straight or with milk and sugar (usually on the last infusion). The breed is a blend of Zairai and Benifuki clones. Unlike most Japanese produced black teas which usually come from the second harvest, due to the higher latitudes this tea is grown at, the producer blends this black tea with both first and second harvests, the ratio changing according to year and conditions. The resulting tea results in a more bold flavor than normally encountered with other Japanese black teas.

    To brew this particular tea, unlike with traditional green tea, you can achieve best results by bringing fresh water to nearly the boiling point in a kettle (instead of an air pot or water heater), and brewing two teaspoons per 8 ounces of water for 3 to 4 minutes.

    Kirari 31, from the first harvest, is a rather rare and especially delicious sencha from Miyazaki prefecture located in Southern Japan. O-Cha.com was the first internet tea shop to offer Sae Midori online years ago to the general public outside of Japan and now we belive we are the first to introduce this newer sencha variety as well.

    "Kirari 31" is derived from a cross of Saki Midori and Sae Midori (which was a cross between Yabukita and Asatsuyu varieties). It matures early in the season. The breed was first produced in 1994 with traits such as growth, disease resistance, cold resistance, and tea quality in mind. Kirari 31 is an early maturing species and because it has excellent frost resistance, it can be cultivated in tea production areas throughout Japan including hilly and mountainous areas.

    The quality of the tea on it's own is higher than that of "Yabukita" or "Samidori", has an excellent in color with a mild flavor and "Samidori" quality. Even when processed as gokuro, it is as good as "Samidori". This sencha green tea is ligh steamed, very aromatic, nicely balanced astringency, and produces a strong umami taste and excellent tea quality.
