                  Uji Matcha Manten

                  Expensive? Yes, it is. However, if you are in search of the absolute best matcha available anywhere, online or off, your search is over! Until we started carrying Uji Matcha Manten back in the mid 2000's, this product had never been sold outside of Japan and it is still offered online exclusively by O-Cha.com. A few words about this item...

                  The first thing you will notice about this matcha is its wonderful aroma. Extremely aromatic!

                  The grower has an extremely small production, and is currently supplying only the local market with this grade, so the supply is extremely limited. O-Cha.com will have this item in stock as supplies are available, which will can be very hit and miss.

                  Because of limited space and the age of the tea plants used for this item, the grower will never be able to increase his production.

                  The typical customer in Japan who purchases this matcha are the tea ceremony instructors - because they know it to be the best.

                  In the Uji area where this tea is grown, the grower is well known and has written a book on the art of growing Tencha (the tea leaves from which matcha is derived.) He has won numerous awards for his Tencha from the Ministry of Agriculture, Forestry and Fisheries.

                  The taste of Manten is very distinctive and there is no competition for this grade - this is a connoisseur's class matcha. O-Cha.com is the first to carry this matcha outside of Japan. Koi-cha (matcha which is served thick) is sweeter, more milder tasting than regular usucha. Because twice the amount of matcha powder is used to make a thicker consistency, a milder, less bitter product is required, and this usually comes from plants that are at least 30 years old. While you can brew a thick matcha in the normal "thin" manner, the opposite is not true and there are really very few matcha green teas which one can make a true think style matcha. Manten, however, is one of those.

                              Matcha Tea Whisk

                              Consisting of 65-72 prongs, this whisk is handmade in Nara, Japan and should not be confused with imports from China that you will commonly encounter from most tea shops. There are over 120 different types of Nara tea whisks that vary according to the type of material used, shape and number of splines which will vary according to the school of tea, the kind of matcha (thick or regular thin type) which will be served, and various other factors. We chose this particular chasen for general purpose matcha drinking. 

                              About our bamboo tea whisk suppler (view detailed images) - Our whisks are made by the Kubo family located near Nara Japan. You can see them in action on this well-made YouTube video making whisks here:

                              Differences between Japanese and Chinese tea whisks... The vast majority of tea whisks encountered on the market are copies made in China, not Japan. There is almost no market for matcha whisks within China itself, nearly all are exported abroad and surprisingly, even to Japan.

                              Japanese craftsmen start the whisk making process using a sharp knife to chip the end of the bamboo, giving it a clean sharp break, whereas in China it tends to be done with a file. Because of this, the tip of the whisk prongs of Japanese whisks are known to last longer.

                              The bamboo used in Japanese whisks is superior and is dried for well over a year before use, no fungicides are used when producing Nara tea whisks. A real Japanese whisk will cost 2 or 3 times more than a Chinese whisk, naturally. It certainly is possible to make matcha with a Chinese made whisk but for long term reliability, we recommend that you invest in the real deal.

                                                                        Uji Matcha Taiko-San

                                                                        We didn't think we would ever be able to offer another matcha comparable to the famous Manten we currently carry; yet it has come to pass! Like Manten, we realize Uji Matcha Taiko-San is an expensive matcha and we make no bones about it - this is about as an exclusive matcha as you will ever find. If you are in search of the absolute best matcha available anywhere, however, then your search is over! Until O-Cha.com obtained this gem from Japan's oldest teashop, this matcha had never been sold outside of Japan.

                                                                        A few words about this item...

                                                                        The farm where Taiko-San is grown is known as "Taikou-tsutsumi" and is located not too far from our supplier Tsuen tea's shop in Uji Japan. The area is both a tea farm as well as an archaeological site. The matcha is produced in this small field by the river beside an ancient levee, which is being studied for its construction methods. The grower, Mr. Fukui, farms several strains of tea in this plot and he adjusts the blend every year according to the plants condition to create the specific flavor. As with Manten, the plot is small and the yield is limited.

                                                                        This handpicked tea has an abundance of umami, which has been described by Tsuen as sweet with a hint of bitter and having a fresh green smell. The color is a rich and dark, very intense green froth. Compared with Manten, this matcha has a more masculine taste. Again, the grower has an extremely small production, and is currently supplying only the local market with this grade so the supply is extremely limited. O-Cha.com will have this item in stock as supplies are available, which may be very hit and miss. Because of limited space and the age of the tea plants used for this item the grower will never be able to increase his production.                                                                                     • Cooking Matcha - From Uji Japan

                                                                                      O-Cha.com now offers a higher quality of cooking grade matcha than what is usually encountered on the market. Because we are based in Japan, we are also able to do so at a very reasonable price.  As will all of our products, it is freshly packaged and does not spend weeks in ocean transit or sit for months on a warehouse shelf.

                                                                                      Here’s a sad fact - Just because your matcha was produced by a Japanese company does not automatically mean it was actually grown in Japan. There are some Japanese companies who grow some of their matcha in China, import it into Japan, and then re-export it again.  This is particularly the case when it comes to cooking grades of matcha.

                                                                                      Unlike many of the cooking grade "matcha" you may see offered online, rest assured our cooking matcha originates in Uji Japan near Kyoto.

                                                                                       

                                                                                      Further, we offer this in a 300 gram package.

                                                                                      Matcha comes in many quality levels but is basically separated into ceremonial grade and cooking grade matcha. While it’s true one could use any of our ceremonial grade matcha for cooking and as a food ingredient (and would in turn be especially magical), authentic, Japan-grown, ceremonial grade matcha is expensive and can make the price of a matcha based product prohibitively expensive. There is a reason why truly ceremonial grades of matcha are usually sold in 20 - 30 gram cans and not by the kilo.

                                                                                      We realize there is a real need for a matcha that while may not be suitable for the tea ceremony, is still needed to be of a sufficiently high enough quality to be used in lattes, smoothies, ice cream, baked goods, etc. Know that careful consideration went into our choice of cooking grade matcha because until we offered this product, we refused to sell anything less than ceremonial grade. We wanted real, authentic Japanese matcha.  Not powdered sencha, but matcha. Not grown in China, but grown in Japan. We wanted as high of quality as possible while still making the price reasonable. While this cooking grade matcha will not compete with the quality of our ceremonial grades of matcha, it's actually better than what many are offering online as supposed "ceremonial" matcha!

A combination of loose-leaf green tea and powdered sencha (not tea dust), this tea bag comes in the form of a triangular, nylon mesh bag, and will not affect the taste as traditional paper tea bags are known to do.                                                                                                                                                           We finally came across a gyokuro green tea bag of a high quality that is worthy of our lineup. Unlike the vast majority of green tea tea bags you run across, each of our Gyokuro Green Tea Bags consists of 5 grams of high quality gyokuro leaf (not tea dust).  There are a few gyokuro stems in this tea bag which give the tea a slight astringency but the main flavor is gyokuro all the way.

                                                                                                                                                          This tea bag comes in a triangular, biodegradable (not plastic or nylon) mesh infusion bag, and will not affect the taste as traditional paper teabags are known to do. A wonderful grassy aroma awaits you when you open the re-sealable package.

                                                                                                                                                          As of November 2020, the tea bag material used for our Uji green tea bags is composed of a starch based biomass material derived from plants. In addition to the filter, the laminate on the tag and string of this product also incorporate the same environmentally-friendly material.

                                                                                                                                                          Notes on Brewing this gyokuro tea bag

                                                                                                                                                          To brew this successfully, you do need to take temperature into consideration. A good proceedure is to use TWO cups to brew this tea.

                                                                                                                                                          1) In your first cup, add hot water (90 ℃ / 194 ℉) and allow it to sit for about a minute. The temperature will drop (see detailed product  images).

                                                                                                                                                          2) Next, pour the water from the first cup into a second cup. The temperature will drop further (see detailed product  images).

                                                                                                                                                          3) Lastly, put the teabag into the first cup (which is now pre-warmed) and pour the water from the second cup back into the first cup with the tea bag. 55℃ / 131℉ is the perfect temperature, brew this for 2.5 to 3 minutes (this is longer than for sencha). Place your used tea bag into the second cup for subsequent infusions.

                                                                                                                                                                      From Uji, near Kyoto, Uji Karigane Gyokuro "Asagiri" is a high quality blend of first harvest gyokuro leaf and gyokuro stems. Gyokuro is shade grown before harvesting, giving it a greener color and sweeter taste. While this is a very delicious green tea in it's own right, since brewing gyokuro takes practice to perfect we feel this green tea also makes a very good introduction to gyokuro brewing at an economical price point. The added stems add a tartness to this green tea and the combination of the two make this one very tasty Japanese green tea.

                                                                                                                                                                      It is prepared in exactly the same way as regular gyokuro, meaning more leaf brewed at a lower temperature for a longer period of time.                                                                                                                                                                                   Organic Gyokuro Haruto

                                                                                                                                                                                  Organic gyokuro Haruto is a new variety of gyokuro that was only registered about 6 years ago and is relatively rare on the market. It is only grown by a handful of farms in Kyushu, with our particular gyokuro grown in Shibushi City, Kagoshima Prefecture. It is harvested earlier in the season than typical and the risk of frost damage is high. Because of the difficulty in growing it, the fact that it's a very new and rare breed, it's unlikely you will encounter this very often in the future.  We had the opportunity to carry it this year, we tried it, and we were quite impressed.

                                                                                                                                                                                  This particular gyokuro is a very high quality green tea that has won awards in Japan. It is a variety with elegant sweetness and umami with dark green tea leaves.

                                                                                                                                                                                  As you may be aware, there are not a lot of organic gyokuro green teas that are what you would call superb, but Haruto is an exception to that general trend. Yes, the price is a bit more expensive than your regular sencha green tea, but considering that less than 1% of all green tea is grown and harvested as gyokuro, and even more rare an organic one that's this superb, that's just how it rolls with a tea of this caliber. 

                                                                                                                                                                                  We find this tea to be very delightful with complex, strong umami notes and after taste. Thoroughly delicious when brewed correctly, probably best made in a shiboridashi teapot with care. As with all gyokuro, it is shade grown for about three weeks before harvesting, giving it a greener color and sweeter taste.  Once you learn to make it properly, you wil be hooked for life!

                                                                                                                                                                                                  Grown in nearby Shirakawa, this is an extremely high quality gyokuro. Gyokuro is shade grown before harvesting, giving it a greener color and sweeter taste. Less that 0.5 % of all green tea harvested in Japan ends up as gyokuro, and among those, this gem is near the top. This green tea is hand-picked (rare - see video tab) and is pure "Gokou" cultivar. Another unique aspect is that unlike the majority of gyokuro grown today, the shading is not done with modern shade cloth but instead using traditional straw and reed screening. The combination of hand-picking and traditional shading methods makes this a very "old school" gyokuro.
