Organic Kabusecha is grown for 14 to 20 days under 45% shade before harvest giving it taste characteristics of both sencha and gyokuro. From Uji. Although it may look similar to matcha, this product is sencha and has different taste characteristics - it's a bit more astringent. This delightful green tea is grown organically in Shizuoka. Medium steamed, Organic Sayamakaori Sencha is rather bold in flavor and imparts a much stronger than average aroma. Grown organically in Kirishima Kagoshima, Kagoshima Organic Sencha "Kurasawa" is an organic light steamed sencha green tea which has a rather intense green-yellow color to it and carries a a nice grassy aroma. 

Unique to this sencha is it's high catechin levels - this green tea has approximately 1.5 to 2 times higher levels of catechins than regular sencha! For this reason it is also packs a very astringent punch to it so brew with care at lower tempertures. Grown organically in the mountainous Kirishima area of Kagoshima Prefecture. Lightly steamed, organic Kirishima Zairai sencha has a light yellow green color to it, medium body, and rather unique taste and aroma due to it's high iron content.  Zairai means "native" in Japanese and refers to the fact that this tea is from no known modern cultivar and is a close derivitive of the original tea plants imported into Japan from China in the 14th century. Since it is "wild" and grown from seed instead of cloning, there is quite a lot of variation between individual plants which gives the leaf a non-uniform leaf structure and charactaristics of a blend. Although it is considered a hardier plant to culitviate, the lack of leaf conformity, in addition to lower yield than recent clones does not encourage growers to grow it means you will not come across this unique tea often.

Packed with umami and one of our personal favorites, this delicious green tea comes from Kagoshima and is of course harvested from the first round of young leaves.  When we first offered this in 2017, we knew we would buy it the moment we tried it. Organic Sae Midori asamushi is a light steamed green tea of the Sae Midori clone and is somewhat rare to be processed in the light steamed form. This product is both flavorful and aromatic, much more so than the typical deep steamed Sae Midori. If you are a light-steamed green tea fan, you should really enjoy this one.  As with all of our loose leaf green teas, packaged in nitrogen flushed packaging.

Because we are based in Japan, we are also able to do so at a very reasonable price.  As will all of our products, it is freshly packaged and does not spend weeks in ocean transit or sit for months on a warehouse shelf.

Matcha comes in many quality levels but is basically separated into ceremonial grade and cooking grade matcha. While it’s true one could use any of our ceremonial grade matcha for cooking and as a food ingredient (and would in turn be especially magical), authentic, Japan-grown, ceremonial grade matcha is expensive and can make the price of a matcha based product prohibitively expensive. There is a reason why truly ceremonial grades of matcha are usually sold in 20 - 30 gram cans and not by the kilo.

We realize there is a real need for a matcha that while may not be suitable for the tea ceremony, is still needed to be of a sufficiently high enough quality to be used in lattes, smoothies, ice cream, baked goods, etc. Know that careful consideration went into our choice of cooking grade matcha because until we offered this product, we refused to sell anything less than ceremonial grade. We wanted real, authentic Japanese matcha.  Not powdered sencha, but matcha. Not grown in China, but grown in Japan. We wanted as high of quality as possible while still making the price reasonable. While this cooking grade matcha will not compete with the quality of our ceremonial grades of matcha, it's actually better than what many are offering online as supposed "ceremonial" matcha!

Expensive? Yes, it is. However, if you are in search of the absolute best matcha available anywhere, online or off, your search is over! Until we started carrying Uji Matcha Manten back in the mid 2000's, this product had never been sold outside of Japan and it is still offered online exclusively by O-Cha.com. A few words about this item...

The first thing you will notice about this matcha is its wonderful aroma. Extremely aromatic!

The grower has an extremely small production, and is currently supplying only the local market with this grade, so the supply is extremely limited. O-Cha.com will have this item in stock as supplies are available, which will can be very hit and miss.

Because of limited space and the age of the tea plants used for this item, the grower will never be able to increase his production.

The typical customer in Japan who purchases this matcha are the tea ceremony instructors - because they know it to be the best.

In the Uji area where this tea is grown, the grower is well known and has written a book on the art of growing Tencha (the tea leaves from which matcha is derived.) He has won numerous awards for his Tencha from the Ministry of Agriculture, Forestry and Fisheries.

The taste of Manten is very distinctive and there is no competition for this grade - this is a connoisseur's class matcha. O-Cha.com is the first to carry this matcha outside of Japan. Koi-cha (matcha which is served thick) is sweeter, more milder tasting than regular usucha. Because twice the amount of matcha powder is used to make a thicker consistency, a milder, less bitter product is required, and this usually comes from plants that are at least 30 years old. While you can brew a thick matcha in the normal "thin" manner, the opposite is not true and there are really very few matcha green teas which one can make a true think style matcha. Manten, however, is one of those.

We didn't think we would ever be able to offer another matcha comparable to the famous Manten we currently carry; yet it has come to pass! Like Manten, we realize Uji Matcha Taiko-San is an expensive matcha and we make no bones about it - this is about as an exclusive matcha as you will ever find. If you are in search of the absolute best matcha available anywhere, however, then your search is over! Until O-Cha.com obtained this gem from Japan's oldest teashop, this matcha had never been sold outside of Japan.

A few words about this item...

The farm where Taiko-San is grown is known as "Taikou-tsutsumi" and is located not too far from our supplier Tsuen tea's shop in Uji Japan. The area is both a tea farm as well as an archaeological site. The matcha is produced in this small field by the river beside an ancient levee, which is being studied for its construction methods. The grower, Mr. Fukui, farms several strains of tea in this plot and he adjusts the blend every year according to the plants condition to create the specific flavor. As with Manten, the plot is small and the yield is limited.

This handpicked tea has an abundance of umami, which has been described by Tsuen as sweet with a hint of bitter and having a fresh green smell. The color is a rich and dark, very intense green froth. Compared with Manten, this matcha has a more masculine taste. Again, the grower has an extremely small production, and is currently supplying only the local market with this grade so the supply is extremely limited. O-Cha.com will have this item in stock as supplies are available, which may be very hit and miss. Because of limited space and the age of the tea plants used for this item the grower will never be able to increase his production. There is no competition for this grade - this is a connoisseur's class matcha. As with matcha Manten, O-Cha.com is the first to carry this matcha outside of Japan. From Uji, near Kyoto, Uji Karigane Gyokuro "Asagiri" is a high quality blend of first harvest gyokuro leaf and gyokuro stems. Gyokuro is shade grown before harvesting, giving it a greener color and sweeter taste. While this is a very delicious green tea in it's own right, since brewing gyokuro takes practice to perfect we feel this green tea also makes a very good introduction to gyokuro brewing at an economical price point. The added stems add a tartness to this green tea and the combination of the two make this one very tasty Japanese green tea.

It is prepared in exactly the same way as regular gyokuro, meaning more leaf brewed at a lower temperature for a longer period of time. Use 10 grams per 300ml or less of water. From the first harvest, Kagoshima Sencha Yutaka Midori "Madoka" is a very special sencha from Kagoshima prefecture located at the southern tip of Japan. Madoka is quite similar to our original Yutaka Midori but is a bit less grassy, has a bit less steaming, and a bit more astringency, which means it probably also packs a bit more catechin punch. Brew with a bit more caution by paying particular attention to brew temperature and brew time.  Try some today!

Kawane Wa-Kōcha is Japanese Black Tea grown in Kawane town (川根町), located in the Haibara District of Shizuoka Prefecture, Japan. While this area is notable for its production of mainly green teas, it may be surprising to know there are numerous growers who specialize in producing black teas as well. This particular version is produced by a rather old and famous company founded in the 8th year of the Meiji period (ca 1875). The tea blender is a 73 year old tea master and uses high quality techniques in the orthodox manner similar to the way traditional Darjeeling is made, but with a Japanese touch. This tea has characteristics similar to both Darjeeling and Ceylon tea, has a strong aroma, a smooth flavor, and has hints of Japanese sweetness. Kawane Wa-Kōcha can be served straight or with milk and sugar (usually on the last infusion). The breed is a blend of Zairai and Benifuki clones. Unlike most Japanese produced black teas which usually come from the second harvest, due to the higher latitudes this tea is grown at, the producer blends this black tea with both first and second harvests, the ratio changing according to year and conditions. The resulting tea results in a more bold flavor than normally encountered with other Japanese black teas.

To brew this particular tea, unlike with traditional green tea, you can achieve best results by bringing fresh water to nearly the boiling point in a kettle (instead of an air pot or water heater), and brewing two teaspoons per 8 ounces of water for 3 to 4 minutes.
