Sencha Green Tea

Green tea in its most common form, sencha is grown under full sun until harvest. While there are many grades of sencha green tea available to the consumer, first harvest green tea is considered to be the best.

Important to note is that high quality first harvest green tea (harvested in late April to early May) can be purchased throughout the year - provided that it is properly stored under deep refrigerated conditions and then pulled and packaged shortly before purchase.

    Starting in 2016, we began to offer an especially select Kyoto sencha from the Tsuen teahouse in Uji, Kyoto Japan. They call this lineup "Chadōraku" and each year it is different. Tsuen teashop owner Yusuke Tsuen is an expert tea taster and has won many awards in tea tasting competitions so you can be sure that what he selects will be outstanding.

    For 2018 it's our pleasure to be able to offer an especially outstanding, Limited Edition light steamed green tea ("asamushi-cha") from Minamiyamashiro village (お茶の京都みなみやましろ村) near Uji. We exclusively obtain this from Japan's oldest teashop, Tsuen Tea. This item is 100% Sakimidori leaves from the first harvest. Seldom do we come across a light steamed green tea with needles of this quality and appearance. When brewed, it yields a very nice pronounced Kyoto umami flavor. The astringency is a bit strong and it's got somewhat of a tart taste and for that reason, we consider this to be somewhat of an advanced brewer's green tea. If brewed properly under capable hands, however, it will result in a very nice infusion with strong umami aftertaste. Although you could brew this in any type of Japanese teapot, you will get the best out of it by brewing in either a hōhin or shiboridashi teapot.

    Yes, we realize it is rather expensive - obviously a lot of hard work went into producing this gem of a green tea. However, our job has always been to first and foremost obtain the best green teas possible for our customers with pricing being a secondary (but still important) consideration. For that reason, we offer this in 30 gram packaging. To keep costs down, this is one of the few green teas we carry in which we will not be able to offer bonus points.     From the first harvest, Kagoshima Sencha Yutaka Midori "Madoka" is a very special sencha from Kagoshima prefecture located at the southern tip of Japan. Madoka is quite similar to our original Yutaka Midori but is a bit less grassy, has a bit less steaming, and a bit more astringency, which means it probably also packs a bit more catechin punch.     This green tea comes from Kagoshima and is of course harvested from the first round of young leaves.  When we offered this for the first time in 2017, we knew we would buy this one as soon as we tried it and sure enough it had sold out by December. Organic Sae Midori asamushi is a light steamed green tea of the Sae Midori clone and is somewhat rare to be processed in the light steamed form. This product is both flavorful and aromatic, much more so than the typical deep steamed Sae Midori. If you are a light-steamed green tea fan, you should really enjoy this one.  As with all of our loose leaf green teas, packaged in nitrogen flushed packaging.

Grown in Takachio, Miyazaki Prefecture Japan.  Organic Kamairi Tamaryokucha is not steamed, but pan fried, the pan firing gives this tea a sweeter, less astringent taste with a touch of roast flavor. The curled, comma leaf shape is also somewhat uniquie and when brewed it has a beautiful clear yellow-green color to it.     From the first harvest in Uji. Kabusecha is grown in the shade for 14~20 days before harvest under 45% shade, giving it characteristics of both sencha and gyokuro. A sweeter, less grassy and more vegetal, less astringent taste than regular sencha, you can definitely taste vegetive hints of gyokuro.  It is easy to brew, not overly astringent, medium steamed, has a lovely green color, and is reasonably priced making it an all around versatile winner of a green tea. Although it has hints of gyokuro, be sure to brew it as you would for sencha, not gyokuro.

    From Kirishima, Kagoshima Japan, a first rate, first flush green tea. Organic sencha "Asatsuyu" is harvested from the first round of young 100% Asatsuyu clone spring leaves. Medium steamed green tea (chumushi), green color with a semi-cloudy clear consistency.  We find this particular asatsuyu to be particularly aromatic and flavorful which is why we chose to include it in our lineup.     From Shizuoka, a unique breed of Japanese green tea grown organically. A first rate, first harvest, deep steamed green tea, the high quality is obvious from the first sip. Strong "umami" sweetness, less astringent and mellow. As with many organic green teas, Organic Sencha "Oku Yutaka" is single estate and is not blended.   • Zairai Organic Kirishima Sencha

    Grown organically in the mountainous Kirishima area of Kagoshima Prefecture. Lightly steamed, organic Kirishima Zairai sencha has a light yellow green color to it, medium body, and rather unique taste and aroma due to it's high iron content.  Zairai means "native" in Japanese and refers to the fact that this tea is from no known modern cultivar and is a close derivitive of the original tea plants imported into Japan from China in the 14th century. Since it is "wild" and grown from seed instead of cloning, there is quite a lot of variation between individual plants which gives the leaf a non-uniform leaf structure and charactaristics of a blend. Although it is considered a hardier plant to culitviate, the lack of leaf conformity, in addition to lower yield than recent clones does not encourage growers to grow it means you will not come across this unique tea often.
