    A must have item. Water should be boiled and then reduced to the proper temperature for proper making of tea. This is what you need for that.

    how long does it take to cool the water down? Do you have to wait or just pour it into this & then right back out to steep your tea?

    A lot depends on your starting temperature, what kind of tea you are making (gyokuro or sencha), etc. Usually green tea should be brewed with cooler water temperature than other types of tea and getting that temperature right is a key factor in having the green tea turn out good. Cooling the water down can be accomplished in a number of ways, again, it depends on the variety of green tea you use, but this device makes doing that somewhat more convenient. You can pour hot water directly into an empty teapot, pass that water to the teacups, back and forth any number of times, any time you transfer water from one vessel to another it warms the vessel and cools the water down at the same time by about 10℃. It is not an exact science and does take a little practice. This device cools the water down quite a bit more than the other methods. This device works particularly well when the water is extremely hot. When you are not sure, it's best to start off using a thermometer in conjunction with this device while you make your first batches of tea so you have some idea what is going on, and after a little practice you will not need the thermometer anymore.
