light steamed green teaAsamushi Sencha The green teas in this category, known in Japanese as "asamushi-cha", or light steamed green teas, are steamed for a shorter period of time than your typical sencha. The period in which any green tea is steamed depends on various characteristics such as where it was grown, elevation, etc. Like deep steamed green tea, not all green teas are suitable for light steaming.

Loose leaf asamushi sencha will usually have large leaf particles and are suitable to be brewed in all types of Japanese green teapots, including those with ceramic "sesame" filters. When brewed, asamushi sencha has a clear, light appearance, usually a bit on the yellowish side but is often quite aromatic. It can be somewhat astringent depending on the individual tea.

    It's our pleasure to be able to offer an especially outstanding, Limited Edition light steamed green tea  ("asamushi-cha") from the Watsuka growing region near Uji.  We exclusively obtain this from Japan's oldest teashop, Tsuen Tea. This item is 100% Yabukita leaves from the first harvest.  Seldom do we come across a light steamed green tea with needles of this quality and appearance. When brewed, it yields an intense flavor. Although you could brew this in any type of Japanese teapot, you will get get the best out of it by brewing in either a houhin or shiboridashi teapot.  

    Yes, we realize it is rather expensive - obviously a lot of hard work went into producing this gem of a green tea.  However, our job has always been to first and foremost obtain the best green teas possible for our customers with pricing being a secondary (but still important) consideration. For that reason, we offer this in 30 gram packaging.  To keep costs down, this is one of the few green teas we carry in which we will not be able to offer bonus points.  Here is your chance to try some of the best of what Japan has to offer in Japanese green tea.

    Brewing notes: We have successfully brewed this at 1 gram & also at 1.2 grams per 1 oz (30 ml) of water at both lower and higher temperature ranges for 1.5 minutes and did not find it to be particularly fussy at either range of the spectrum.

    "Hana no Kaori" translates as "Floral Aroma", which is what this sencha is all about. A rather unusual offering for you, Uji sencha "Hana no Kaori" was obtained through one of the growers of the Tsuen tea shop in Uji Japan. What's different about this tea? This unusual offering became "slightly" fermented. In the case of Chinese oolong tea, this of course is done on purpose. In the case of Japanese sencha, fermentation is normally something to be avoided as the tea will usually no longer be "green" anymore. In the case of "Hana no Kaori" this tea not only fermented slightly, but it also keeps it's very beautiful green color. The result was not only a beautiful green colored sencha, but one with a rather strong oolong-like floral notes and taste. All who have tried it have been impressed with the delicious taste of this sencha green tea - we could not pass it up!

    This organic kabusecha green tea comes from Kirishima City, Kagoshima and is of course harvested from the first round of young leaves. Organic Kabusecha is grown for 14 to 20 days under 45% shade before harvest giving it taste characteristics of both sencha and gyokuro. This 2015 version comes from the Yabukita clone and is light steamed (asamushi).  A sweeter, less astringent taste than regular sencha, it has a lovely green color and is quite flavorful. Brew as you would for sencha. As with all of our loose leaf green teas, packaged in nitrogen flushed packaging.

    This green tea comes from Kirishima City, Kagoshima and is of course harvested from the first round of young leaves.  Organic Sae Midori Kabusecha is grown for 14 to 20 days under 45% shade before harvest giving it taste characteristics of both sencha and gyokuro. This light steamed (asamushi) version comes from the Sae Midori clone and it is somewhat rare to be processed in kabusecha form.  A sweeter, less astringent taste than regular sencha, it has a lovely green color and is quite flavorful. Brew as you would for sencha. As with all of our loose leaf green teas, packaged in nitrogen flushed packaging.

    From Kirishima Japan, a first rate, first flush green tea. Organic sencha "Asatsuyu" is harvested from the first round of young 100% Asatsuyu clone spring leaves. Light steamed green tea (asamushi), green color with a clear consistency.  We find this particular asatsuyu to be particularly aromatic and flavorful which is why we chose to include it in our lineup. If you are looking for a healthy, organic, light steamed daily sencha of good value this would be hard to beat. Certified organic JONA/JAS. From the first harvest of course, a light steamed ( asamushi ). Well balanced with just the right amount of astringency and very aromatic.     Grown organically in the mountainous Kirishima area of Kagoshima Prefecture. Lightly steamed, organic Kirishima Zairai sencha has a light yellow green color to it, medium body, and rather unique taste and aroma due to it's high iron content.  Zairai means "native" in Japanese and refers to the fact that this tea is from no known modern cultivar and is a close derivitive of the original tea plants imported into Japan from China in the 14th century. Since it is "wild" and grown from seed instead of cloning, there is quite a lot of variation between individual plants which gives the leaf a non-uniform leaf structure and charactaristics of a blend. Although it is considered a hardier plant to culitviate, the lack of leaf conformity, in addition to lower yield than recent clones does not encourage growers to grow it means you will not come across this unique tea often.
