Sōfū sencha is an unusual variety of green tea, a cross between Yabukita and another cultivar known as "Inzatsu" 131.  Our version is grown in Tokunoshima, a small island located between Kagoshima and Okinawa.  Lightly steamed and a somewhat golden yellow color, it interstingly has a mixed green tea and floral, jasmine like taste and aroma.

Sofu has become popular in recent years due to the purported wide range of potential health benefits. Research has shown that this is due to its anthranilic acid content, which is also found as an aroma component in jasmine tea. It is also being looking at as possibly being beneficial for dementia and Alzheimer's diseases. Sofu also contains a high amount of the component  quercetin (high in many fruits and vegetables such as onions), which is thought to improve brain of cognitive function.

    I didn't figure out how to brew Sofu Sencha to my taste until the very last pot. Now that I *think* I have my 'Goldilocks' temperature and brew times -- I really like this tea!

    At first I used the recommended amount: 0.6g to 1 fluid oz of water-- at 160 F for the following times:
    first brew - 60 seconds
    second brew - 30 seconds
    third brew - 90 seconds

    This resulted in either a bitter or flat brew without the jasmine or floral notes. I kept experimenting by increasing the amount of tea per fluid ounce of water, and lowering the temperature.

    But my final attempt was the most successful; I was able to finally taste the floral, sweet, nutty notes of the tea. I used .77g of tea per 1 fuid ounce of water, brewed at 170-175 F -- but only for 20-60 seconds as follows:
    first brew - 40 seconds
    second brew - 45 seconds
    third brew - 60 seconds

    When I order again I will try the same parameters but at the recommended temperature of 160 F and perhaps decrease the time for the second brew to 30 seconds, since 45 seconds seemed to introduce a little bitterness.

    Really lovely (shincha) sencha. Not only is it quite amazing if it comes to taste and aroma but also it's influence on mind is astonishing. Calms you down and make you feel peaceful. Of course price for such tea is superb as well :D

    Very interesting new tea variety. It has a unique character. The floral notes are distinct and the aroma is well balanced. If you like jasmine tea or light oolong teas, this is perfect for you. The color is more golden yellow than green and tea is clear. Leaves are large and stay in the pot well. This tea is easy to brew and delicious. I will definitely order this again. I usually drink fukamushi and I didn't expect to like this this much, but it is a new favorite.
