Recently, some sellers have questioned the use of terms like "ceremonial grade" or "culinary grade" to describe matcha. It's true that Japan has no official grading system for matcha. That said, clear differences in quality exist, and using general categories helps customers choose the right matcha for their needs.

• Culinary Matcha – Best suited for use in food, smoothies, and lattes
• Traditional Matcha – Higher-grade matcha intended to be whisked and enjoyed as a standalone tea. Typically made from the first harvest of shaded plants, often using leaves from older, more established tea bushes

When Is Matcha Released?

Matcha is not released on the same schedule as sencha. While sencha is typically available shortly after harvest, matcha  (especially the highest quality matcha) is often aged in cold storage before release. This aging process enhances its flavor, making it smoother and more balanced.

• New matcha typically becomes available between June and October
• Higher-end matcha is often aged and released later in the year
• To meet demand, producers may release some matcha earlier or blend aged tea with fresh harvests
