          Shizuoka Sencha Mio

          Harvested from the first round of young spring leaves, this 100% Yabukita green tea comes from the Makinohara tea growing district in Shizuoka Prefecture. We recently came across this gem and snapped it up on the spot - this is one very delicious sencha green tea! Sencha "Mio" is medium steamed has a somewhat more pronounced grassy aroma and taste compared with the average deep steamed green tea and the taste remains on the palate for an extended time.

          An overall easy brewer (a teapot for fukuamushi-cha is recommended, however). Be sure to not brew too hot, for too long, or with too much leaf. As with all of our loose-leaf green teas, freshly packaged in nitrogen filled bags.

              Shizuoka Sencha Haruna

              Shizuoka sencha Haruna - You can savor the rich sweetness and unadulterated, expansive flavor of this tea, which is free from any off notes. Like our 'Mio' green tea, it is grown in the fertile soil and favorable climate of the Makinohara plateau's Sakabe area and is picked at the height of its flavor.

              This tea is all about bold sweetness, a nice touch of astringency, and a cool, refreshing finish.

              This tea is named 'Haruna', inspired by our supplier's only daughter, reflecting a wish for her to grow freely and with abundant love. Growth, whether in plants, animals, or humans, means becoming more robust—bones or stems firm up, and what was once young and fragile becomes strong and resilient, sometimes losing the tender softness of youth.

              In the case of agricultural products like green tea, the impact of even a day's difference is significant, drastically altering the quality. These variations in traits that develop through growth are not only marketed for their unique appeal but also affect the pricing.

              Thus, our green teas 'Mio' and 'Haruna', although from the same region and the same variety in Shizuoka Prefecture's Makinohara Sakabe area, are harvested just two days apart. Despite their common origin, their flavors differ subtly.

              While 'Mio' offers a delicate softness that gently lingers in the mouth post-drinking, 'Haruna' presents a more pronounced flavor profile, bursting with charm and noticeably sweeter.

              We hope you enjoy comparing them and finding your preferred blend.

              This tea is generally simple to brew, though we recommend using a teapot designed for fukuamushi-cha for optimal results. Care should be taken to avoid brewing at excessively high temperatures, for prolonged periods, or with an excessive amount of tea leaves. Like all our loose-leaf green teas, it is packaged fresh in nitrogen-filled bags.

                          Kawane Wa-Kōcha

                          Kawane Wa-Kōcha is Japanese Black Tea grown in Kawane town (川根町), located in the Haibara District of Shizuoka Prefecture, Japan. While this area is notable for its production of mainly green teas, it may be surprising to know there are numerous growers who specialize in producing black teas as well. This particular version is produced by a rather old and famous company founded in the 8th year of the Meiji period (ca 1875). The tea blender is a 73 year old tea master and uses high quality techniques in the orthodox manner similar to the way traditional Darjeeling is made, but with a Japanese touch. This tea has characteristics similar to both Darjeeling and Ceylon tea, has a strong aroma, a smooth flavor, and has hints of Japanese sweetness. Kawane Wa-Kōcha can be served straight or with milk and sugar (usually on the last infusion). The breed is a blend of Zairai and Benifuki clones. Unlike most Japanese produced black teas which usually come from the second harvest, due to the higher latitudes this tea is grown at, the producer blends this black tea with both first and second harvests, the ratio changing according to year and conditions. The resulting tea results in a more bold flavor than normally encountered with other Japanese black teas.

                          To brew this particular tea, unlike with traditional green tea, you can achieve best results by bringing fresh water to nearly the boiling point in a kettle (instead of an air pot or water heater), and brewing two teaspoons per 8 ounces of water for 3 to 4 minutes.

                                  • Kabusecha

                                    From the first harvest in Uji. Kabusecha is grown in the shade for 14~20 days before harvest under 45% shade, giving it characteristics of both sencha and gyokuro. A sweeter, less grassy and more vegetal, less astringent taste than regular sencha, you can definitely taste vegetive hints of gyokuro.  It is easy to brew, not overly astringent, medium steamed, has a lovely green color, and is reasonably priced making it an all-around versatile winner of a green tea. Although it has hints of gyokuro, be sure to brew it as you would for sencha, not gyokuro.
