Sencha, the most commonly enjoyed type of green tea, is cultivated under full sunlight until it's harvested. Among the various grades available, first harvest sencha is regarded as the highest quality. It's important to know that high-quality first harvest green tea, typically picked in late April to early May, is available year-round if it's stored properly in deep refrigeration and packaged just before sale.

                      Brewing this tea is a breeze! Sae Midori is a unique blend of Yabukita and Asa-Tsuyu tea plants, first registered in 1990.                           Deep Steamed Oku Midori Sencha

                          Deep Steamed Oku Midori - Those of you who know what this is will be quite happy to know that this year we were able to procure this deep steamed, grassy, umami-bomb of a green tea.  For a myriad of reasons, this has been one of the more harder to obtain green teas for us over the years. We didn't have it at all in 2022 and nearly didn't get it again this year. But alas, this year we pushed it and made it happen.

                          From Kagoshima, an extremely flavorful, full of umami,  deep steamed green tea.  The high quality of this Oku Midori fukamushi green tea is obvious from the first sip. It has a very beautiful emerald green color to it and strong aroma. Harvested from the first round of young spring leaves. Our personal opinion - This is probably one of the all around best green teas you will ever drink. Nitrogen flushed and vacuum packaged, as fresh of a green tea as you can get. 

                          We're not putting it into the "shincha" category because it's already June.  However, know that this is a very fresh, first harvest green tea from 2023.

                                  Shizuoka Sencha Haruna

                                  Shizuoka sencha Haruna - You can savor the rich sweetness and unadulterated, expansive flavor of this tea, which is free from any off notes. Like our 'Mio' green tea, it is grown in the fertile soil and favorable climate of the Makinohara plateau's Sakabe area and is picked at the height of its flavor.

                                  This tea is all about bold sweetness, a nice touch of astringency, and a cool, refreshing finish.

                                  This tea is named 'Haruna', inspired by our supplier's only daughter, reflecting a wish for her to grow freely and with abundant love. Growth, whether in plants, animals, or humans, means becoming more robust—bones or stems firm up, and what was once young and fragile becomes strong and resilient, sometimes losing the tender softness of youth.

                                  In the case of agricultural products like green tea, the impact of even a day's difference is significant, drastically altering the quality. These variations in traits that develop through growth are not only marketed for their unique appeal but also affect the pricing.

                                  Thus, our green teas 'Mio' and 'Haruna', although from the same region and the same variety in Shizuoka Prefecture's Makinohara Sakabe area, are harvested just two days apart. Despite their common origin, their flavors differ subtly.

                                  While 'Mio' offers a delicate softness that gently lingers in the mouth post-drinking, 'Haruna' presents a more pronounced flavor profile, bursting with charm and noticeably sweeter.

                                  We hope you enjoy comparing them and finding your preferred blend.

                                  This tea is generally simple to brew, though we recommend using a teapot designed for fukuamushi-cha for optimal results. Care should be taken to avoid brewing at excessively high temperatures, for prolonged periods, or with an excessive amount of tea leaves. Like all our loose-leaf green teas, it is packaged fresh in nitrogen-filled bags.

                                              Sae Midori Organic Asamushi Sencha

                                              Packed with umami and one of our personal favorites, this delicious green tea comes from Kagoshima and is of course harvested from the first round of young leaves.  When we first offered this in 2017, we knew we would buy it the moment we tried it. Organic Sae Midori asamushi is a light steamed green tea of the Sae Midori clone and is somewhat rare to be processed in the light steamed form. This product is both flavorful and aromatic, much more so than the typical deep steamed Sae Midori. If you are a light-steamed green tea fan, you should really enjoy this one.  As with all of our loose leaf green teas, packaged in nitrogen flushed packaging.

                                                      Unlike the vast majority of green tea tea bags you run across, each of our Uji Green Tea Bags consists of 5 grams of high quality sencha leaf (not tea dust). This tea bag comes in a triangular, biodegradable (not plastic or nylon) mesh infusion bag, and will not affect the taste as traditional paper teabags are known to do.                                                           Organic Kabusecha Sae Midori

                                                          This green tea comes from Kirishima City, Kagoshima and is of course harvested from the first round of young leaves. Organic Sae Midori Kabusecha is grown for 14 to 20 days under 45% shade before harvest giving it taste characteristics of both sencha and gyokuro. This light steamed (asamushi) version comes from the Sae Midori clone and it is somewhat rare to be processed in kabusecha form.  A sweeter, less astringent taste than regular sencha, it has a lovely green color and is quite flavorful. Brew as you would for sencha. As with all of our loose leaf green teas, packaged in nitrogen flushed packaging.

                                                                Shizuoka Sencha Mio

                                                                A few years back, we stumbled upon a real treasure and immediately knew we had to have it—this incredibly delicious sencha green tea. It is crafted from the tender young buds that haven't quite reached full maturity, which gives it a unique gentle sweetness and a taste that lingers beautifully after each sip. This tea, our 100% Yabukita "Mio", comes from the first flush of spring leaves, right from the Sakabe District of the Makinohara Plateau—Japan's top spot for tea thanks to its superior soil and climate.

                                                                What sets Sencha "Mio" apart is its medium steaming process, which imparts a subtle sweetness that is distinctly pleasant. It's a flavor that stays with you, perfectly balancing sweetness with a light astringency that keeps it interesting cup after cup. This Yabukita variety captures the essence of those still-maturing young buds, known as miru-me, blending their charm with an exquisite softness that makes it one of the finest green teas you can find in Shizuoka.

                                                                Mio's sibling green tea, Haruna, also grown in the same district, is harvested just a day or two later. This slight delay allows the leaves to develop a bit more, deepening the flavor but reducing that characteristic softness just a tad.

                                                                Mio is wonderfully easy to brew, though we do recommend using a teapot designed for fukuamushi-cha to get the best results. Just remember not to use water that's too hot, or steep it too long, or use too much leaf.

                                                                Here's a little tip for brewing: cool your water to about 70 degrees Celsius (160 F) and watch carefully as the tea leaves unfurl to their full extent.

                                                                          From the first harvest in Uji. Kabusecha is grown in the shade for 14~20 days before harvest under 45% shade, giving it characteristics of both sencha and gyokuro. A sweeter, less grassy and more vegetal, less astringent taste than regular sencha, you can definitely taste vegetive hints of gyokuro.  It is easy to brew, not overly astringent, medium steamed, has a lovely green color, and is reasonably priced making it an all-around versatile winner of a green tea. Although it has hints of gyokuro, be sure to brew it as you would for sencha, not gyokuro.

                                                                                Grown in Kagoshima Prefecture. Somewhere between light and medium steamed. We knew we had to acquire this when we tasted it as it has a quite strong aroma and very pleasant umami taste. Very nicely balanced this has been priced competitively and is a very good value considering its high quality. Very delicious, we are confident you will enjoy this product.                                                                                     From the first harvest, Kagoshima Sencha Yutaka Midori "Madoka" is a very special sencha from Kagoshima prefecture located at the southern tip of Japan. Madoka is quite similar to our original Yutaka Midori but is a bit less grassy, has a bit less steaming, and a bit more astringency, which means it probably also packs a bit more catechin punch. Brew with a bit more caution by paying particular attention to brew temperature and brew time.  Try some today!

Organic sencha "Asatsuyu" is harvested from the first round of young 100% Asatsuyu clone spring leaves. Medium steamed green tea (chumushi), green color with a semi-cloudy clear consistency.  We find this particular asatsuyu to be particularly aromatic and flavorful which is why we chose to include it in our lineup.                                                                                                   Kawane Wa-Kōcha

                                                                                                  Kawane Wa-Kōcha is Japanese Black Tea grown in Kawane town (川根町), located in the Haibara District of Shizuoka Prefecture, Japan. While this area is notable for its production of mainly green teas, it may be surprising to know there are numerous growers who specialize in producing black teas as well. This particular version is produced by a rather old and famous company founded in the 8th year of the Meiji period (ca 1875). The tea blender is a 73 year old tea master and uses high quality techniques in the orthodox manner similar to the way traditional Darjeeling is made, but with a Japanese touch. This tea has characteristics similar to both Darjeeling and Ceylon tea, has a strong aroma, a smooth flavor, and has hints of Japanese sweetness. Kawane Wa-Kōcha can be served straight or with milk and sugar (usually on the last infusion). The breed is a blend of Zairai and Benifuki clones. Unlike most Japanese produced black teas which usually come from the second harvest, due to the higher latitudes this tea is grown at, the producer blends this black tea with both first and second harvests, the ratio changing according to year and conditions. The resulting tea results in a more bold flavor than normally encountered with other Japanese black teas.

                                                                                                  To brew this particular tea, unlike with traditional green tea, you can achieve best results by bringing fresh water to nearly the boiling point in a kettle (instead of an air pot or water heater), and brewing two teaspoons per 8 ounces of water for 3 to 4 minutes.

                                                                                                                    Perfect if you are wanting something refreshing without the caffeine.  Made by the same maker as our legendary Uji Miyabi Sencha, each of our Uji Hōjicha Tea Bags  consists of 4 grams of a high quality loose leaf hōjicha green tea (not tea dust). Hōjicha is a green tea that has been roasted, imparting a red color and a very unique taste. Since the baking process removes the caffeine, this tea is often served in Japan to patients in hospitals and to children. This tea bag comes in a triangular, nylon mesh infusion bag, and will not affect the taste as traditional paper teabags are known to do. A wonderful taste experience awaits you when you open the re-sealable package. Our Uji Hōjicha Tea Bags  are very delicious and you can serve them either hot or iced.                                                                                                                                                   A unique form of first harvest sencha, known as shincha ("new leaf"), is immediately packaged and sold shortly after harvesting without undergoing cold storage, making it available only for a few months post-harvest. It’s worth noting that nearly all our green teas are from the first harvest and are distinctly different from lower-grade, late-harvest teas like bancha or kukicha, though we also offer a selection of second harvest sencha that are still very flavorful.
