        Sae Midori Organic Asamushi Sencha

Packed with umami and one of our personal favorites, this delicious green tea comes from Kagoshima and is of course harvested from the first round of young leaves.  When we first offered this in 2017, we knew we would buy it the moment we tried it. Organic Sae Midori asamushi is a light steamed green tea of the Sae Midori clone and is somewhat rare to be processed in the light steamed form. This product is both flavorful and aromatic, much more so than the typical deep steamed Sae Midori. If you are a light-steamed green tea fan, you should really enjoy this one.  As with all of our loose leaf green teas, packaged in nitrogen flushed packaging.

Note - While we will try to get a larger inventory this year, know that this tea usually sells out every year by December.

            Glazed Teapot for Green Tea

A very pretty glazed teapot handcrafted in Tokoname Japan.  Features a very finely meshed removable stainless steel infuser basket for easy cleaning. This teapot is taller rather than wide making it especially suitable for deep steamed (fukamushi) green tea. Of course it will easily handle medium steamed green teas as well.

Although you could brew gyokuro or light steamed green teas in this teapot in a pinch, due to the nature of the larger leaf particles and the need for room for leaf expansion, a basket type of teapot would not be your first choice for those types of green teas.  We suggest you look in the Asamushi | Gyokuro | Light-Steamed Teapots category of you are mostly brewing those types of teas.

             370ml / 12.5 oz capacity.

                Organic Meiryoku Sencha

This organic green tea hails from Kirishima Kagoshima and is of course harvested from the first round of young leaves. Light-steamed (chūmushi) Organic Sencha Meiryoku has a lovely green color.  Medium aroma, somewhat low astringency, this organic sencha is nicely balanced, easy to make, and easy to drink - one of our best aquasitions of the year.  As with all of our loose leaf green teas, packaged in nitrogen flushed packaging.

                    Tokoname Shiboridashi Teapot

Handcrafted in Tokoname Prefecture, Japan. This type of teapot is becoming harder to find over the years. Since gyokuro should be brewed at a lower temperature with double the amount of loose leaf, notwithstanding the fact that gyokuro is usually the most expensive type of loose-leaf green tea available, the use of this teapot is ideal for gyokuro enthusiasts. Multiple small infusions for individual cups. This teapot also works great for light steamed asamushi sencha as well.

How to Brew Gyokuro - Step-by-Step Instructions!

The actual size of this teapot is purposefully small, measuring 10.5 cm wide x 5.3 cm tall (4" x 2") and holding about 100ml / 3.4 ounces of water. The thin gap between the in the inner body of the teapot and the lid eliminate the need for a filter basket.

Important to note - This teapot is meant to be used with larger leaf green teas such as light steamed sencha green tea or gyokuro, it is not suitable for anything with a fine leaf particle such as deep steamed green tea (fukamushi-cha).

The craftsmanship of these items is superb, and many not-so-obvious fine details went into making this teapot. Please note that since each of these items are had crafted, they may very slightly from the shown images. So, if you are a regular gyokuro drinker or have ever considered a foray into gyokuro, you will be hard pressed to find a better teapot for it than our handmade shiboridashi and houhin teapots!

The primary purpose is to hold enough volume to brew a single cup at a time, or perhaps two small cups of gyokuro. The thin gap between the in the inner body of the teapot and the lid eliminate the need for a filter basket.

Grown organically in the mountainous Kirishima area of Kagoshima. This is a rather exclusive product, only the tips of the young tender buds are used. Light steamed, this sencha has a medium body and carries a rather intense, nice grassy aroma and an unusually strong umami flavor. Organic Kirishima Asamushi Sencha has a very nicely balanced astringency, aroma and taste. This light steamed (asamushi) version comes from the Sae Midori clone and it is somewhat rare to be processed in kabusecha form.  A sweeter, less astringent taste than regular sencha, it has a lovely green color and is quite flavorful. Grown organically in the mountainous Kirishima area of Kagoshima Prefecture. Lightly steamed, organic Kirishima Zairai sencha has a light yellow green color to it, medium body, and rather unique taste and aroma due to it's high iron content.  Zairai means "native" in Japanese and refers to the fact that this tea is from no known modern cultivar and is a close derivitive of the original tea plants imported into Japan from China in the 14th century. Since it is "wild" and grown from seed instead of cloning, there is quite a lot of variation between individual plants which gives the leaf a non-uniform leaf structure and charactaristics of a blend. Although it is considered a hardier plant to culitviate, the lack of leaf conformity, in addition to lower yield than recent clones does not encourage growers to grow it means you will not come across this unique tea often.

Very delicious, here's your chance to experience a green tea with characteristics of the teas of old Japan. As with all of our loose leaf green teas, packaged in nitrogen flushed packaging.

Organic Kabusecha is grown for 14 to 20 days under 45% shade before harvest giving it taste characteristics of both sencha and gyokuro. This version comes from the Yabukita clone and is lightly steamed.  The aroma is unusually strong, it has a lovely green color and is quite flavorful.  Brew as you would for sencha. Unlike the vast majority of green tea tea bags you run across, each of our Gyokuro Green Tea Bags consists of 5 grams of high quality gyokuro leaf (not tea dust).  There are a few gyokuro stems in this tea bag which give the tea a slight astringency but the main flavor is gyokuro all the way.

This tea bag comes in a triangular, biodegradable (not plastic or nylon) mesh infusion bag, and will not affect the taste as traditional paper teabags are known to do. A wonderful grassy aroma awaits you when you open the re-sealable package.

To brew this successfully, you do need to take temperature into consideration. A good proceedure is to use TWO cups to brew this tea.

                                                                                    1) In your first cup, add hot water (90 ℃ / 194 ℉) and allow it to sit for about a minute. The temperature will drop (see detailed product  images).

                                                                                    2) Next, pour the water from the first cup into a second cup. The temperature will drop further (see detailed product  images).

                                                                                    3) Lastly, put the teabag into the first cup (which is now pre-warmed) and pour the water from the second cup back into the first cup with the tea bag. 55℃ / 131℉ is the perfect temperature, brew this for 2.5 to 3 minutes (this is longer than for sencha). Place your used tea bag into the second cup for subsequent infusions.

A first rate medium steamed organic green tea. This has become a very popular since we added it to our lineup. The high quality of this green tea is obvious from the first sip and we feel is a particularly good quality value for the price. It has a beautiful green color to it and strong aroma. Harvested from the first round of young spring leaves, it is grown and certified organic. Nitrogen flushed and vacuum packaged, as fresh of an organic green tea as you can get.

Our price includes 100 grams of tea per package.

The added stems add a tartness to this green tea and the combination of the two make this one very tasty Japanese green tea.

Organic gyokuro Haruto is a new variety of gyokuro that was only registered about 6 years ago and is relatively rare on the market. It is only grown by a handful of farms in Kyushu, with our particular gyokuro grown in Shibushi City, Kagoshima Prefecture. It is harvested earlier in the season than typical and the risk of frost damage is high. Because of the difficulty in growing it, the fact that it's a very new and rare breed, it's unlikely you will encounter this very often in the future.  We had the opportunity to carry it this year, we tried it, and we were quite impressed.

This particular gyokuro is a very high quality green tea that has won awards in Japan. It is a variety with elegant sweetness and umami with dark green tea leaves.

As you may be aware, there are not a lot of organic gyokuro green teas that are what you would call superb, but Haruto is an exception to that general trend. Yes, the price is a bit more expensive than your regular sencha green tea, but considering that less than 1% of all green tea is grown and harvested as gyokuro, and even more rare an organic one that's this superb, that's just how it rolls with a tea of this caliber.

We find this tea to be very delightful with complex, strong umami notes and after taste. Thoroughly delicious when brewed correctly, probably best made in a shiboridashi teapot with care. Grown in nearby Shirakawa, this is an extremely high quality gyokuro. Gyokuro is shade grown before harvesting, giving it a greener color and sweeter taste. Less that 0.5 % of all green tea harvested in Japan ends up as gyokuro, and among those, this gem is near the top. This green tea is hand-picked (rare - see video tab) and is pure "Gokou" cultivar. Another unique aspect is that unlike the majority of gyokuro grown today, the shading is not done with modern shade cloth but instead using traditional straw and reed screening. The combination of hand-picking and traditional shading methods makes this a very "old school" gyokuro.

Once you learn to make it properly, you will be hooked for life!
